En Espa\u00f1a en cambio, inmediatamente pensar\u00e1n en una bofetada, pero en M\u00e9xico una torta es un universo entero que cabe en dos trozos de pan.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Parece ser que, a mediados del siglo XVI, John Montagu, el IV conde de S\u00e1ndwich, pasaba horas interminables frente a la mesa de naipes, un lud\u00f3pata dir\u00edamos hoy. Y como no quer\u00eda levantarse para dejar su pasi\u00f3n, tuvo la ocurrencia de utilizar dos rebanadas de pan para evitar mancharse los dedos con el fiambre, los quesos y las carnes fr\u00edas que le serv\u00edan para comer, y as\u00ed naci\u00f3 el s\u00e1ndwich, dicen el 6 de agosto de 1762.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Dos trozos de pan con algo dentro, suena f\u00e1cil, un <\/span><i><span data-contrast=\"none\">bocadillo<\/span><\/i><span data-contrast=\"none\"> o <\/span><i><span data-contrast=\"none\">bocata <\/span><\/i><span data-contrast=\"none\">en Espa\u00f1a, <\/span><i><span data-contrast=\"none\">torta <\/span><\/i><span data-contrast=\"none\">en M\u00e9xico, <\/span><i><span data-contrast=\"none\">refuerzo<\/span><\/i><span data-contrast=\"none\"> en Uruguay, <\/span><i><span data-contrast=\"none\">pan con<\/span><\/i><span data-contrast=\"none\"> en Guatemala, Costa Rica, Cuba y Venezuela<\/span><i><span data-contrast=\"none\">; bala fr\u00eda<\/span><\/i><span data-contrast=\"none\">, tambi\u00e9n en Venezuela y por supuesto est\u00e1 el famoso <\/span><i><span data-contrast=\"none\">chorip\u00e1n<\/span><\/i><span data-contrast=\"none\"> argentino. Dos piezas de pan en tama\u00f1o similar entre las que se coloca o se unta cualquier otro alimento. Incluso los s\u00e1ndwiches que, sin duda, tienen mucha menos gracia.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Pero en M\u00e9xico, \u00a1ahhhh!, en M\u00e9xico se ha llevado la torta a niveles insuperables, poni\u00e9ndole dentro todo lo que usted imagine, y mucho m\u00e1s. Yo siempre digo que una torta bien hecha, es la manera mexicana de demostrar a nuestra muy barroca manera, ese deseo de tener al mundo entre las manos, porque la torta es mucho m\u00e1s que un simple alimento, es un refugio, una tabla de salvaci\u00f3n, un s\u00edmbolo identitario, la suma de nuestras pasiones y reflejo perfecto del esplendor de todos nuestros mestizajes, en medio de esos trozos de pan, cabe nuestra historia.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Soy Benito Taibo, bienvenidos a la\u202f<\/span><i><span data-contrast=\"none\">Cocina del Infierno<\/span><\/i><span data-contrast=\"none\">\u202fque hoy se arremanga la camisa y se dispone a echarse una torta, una tortuga, acompa\u00f1ada de un refresco tan rojo como el diablo, y a celebrar ese indispensable y maravilloso invento que por supuesto tiene su peculiar historia mexicana.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Si bien hay indicios de que en un peri\u00f3dico poblano llamado <\/span><i><span data-contrast=\"none\">El p\u00e1jaro verde<\/span><\/i><span data-contrast=\"none\">, se anunciaba una \u201ctorta compuesta\u201d, entre comillas, en 1864, casi todos los historiadores coinciden en que la torta en su forma actual, surgi\u00f3 en la Ciudad de M\u00e9xico en 1892, de mano del genial Armando Mart\u00ednez Centuri\u00f3n, qui\u00e9n en busca de ingresos econ\u00f3micos decidi\u00f3 vender panes con comida adentro \u00a1Lo amamos, Don Armando!, y sus creaciones fueron m\u00edticas y generadores de toda una tradici\u00f3n.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Estaba su torter\u00eda en el Callej\u00f3n del Esp\u00edritu Santo, hoy Motolin\u00eda, junto a la iglesia de San Felipe Neri, y las \u201cTortas de Armando\u201d, muy pronto fueron por su precio accesible y su enorme tama\u00f1o todo un fen\u00f3meno.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Antonio de Valle Arizpe, ese gran cronista de nuestra ciudad, habla con nostalgia de esas tortas, que lamentablemente yo nunca pude comer, porque las de Armando que com\u00ed no eran ni por mucho las que cuenta la leyenda.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Dice Don Artemio, y lo cito textualmente: \u201cera un placer grande el comer esas tortas magn\u00edficas, pero el gusto comenzaba desde ver a Armando prepararlas con habilidosa velocidad. Cuando Armando estaba entregado a su tarea con gracia y experta destreza nadie hozaba a proferir ni una sola palabra, o si acaso se hablaba y era en voz baja, sin quitar los ojos habidos de los desacelerados y magistrales movimientos del cuchillo, apenas se conclu\u00eda la elaboraci\u00f3n complicada de la torta, cuando ya andaba preparando otra con ligereza, y despu\u00e9s otra y otra m\u00e1s, y todas ellas con esmero y prontitud indecibles, en la puerta se aglomeraba sabore\u00e1ndose el gent\u00edo y s\u00f3lo se escuchaba en aquel amplio silencio, como esot\u00e9rico, la voz que dec\u00eda: -\u00a1Armando, una de lomo!.-, -\u00a1Armando, una de jam\u00f3n!-, - \u00a1Armando, tres de pollo para llevar!-. No hab\u00eda para nosotros, en ese tiempo, manjar m\u00e1s regalado que ese, que ten\u00eda el incomparable aderezo del hambre\u201d, dejo de citar a Don Artemio.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">M\u00e1s tarde, en el tiempo y el recuerdo, Salvador Novo tambi\u00e9n ensalzar\u00eda las glorias de Don Armando, de quien dice, y cito textualmente: \u201ces precursor de las muchas torter\u00edas que despu\u00e9s se han abierto en la ciudad, afrontando la creciente demanda de la creciente poblaci\u00f3n de transe\u00fantes, que hacen un alto a despacharse un par de tortas, ya no s\u00f3lo de pavo, humedecida la telera con el consom\u00e9, y si acaso con un chilito en vinagre, que con eso bastaba, si no, ahora de lomo con rajas, de queso de puerco, de milanesa, de huevo, de chorizo, de bacalao, o simplemente de jam\u00f3n o queso.\u201d Dejo de citar a Salvador Novo.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">La torta le merece a nuestro cronista, estos memorables renglones en los que el alimento queda \u00edntimamente ligado a la vida de la urbe, vuelve Salvador Novo: \u201cLas tortas, tortugas pacientes resignadas a morir a mordiscos, surgen envueltas en servilletas de papel de los cajones de escritorio, a apaciguar el hambre de las once secretarias que no tuvieron tiempo mas que de apurar a un jugo de naranja antes de correr al autob\u00fas. Llenan por poco tiempo las canastas que los gordos torteros pasean con una tentaci\u00f3n cerca de las f\u00e1bricas a la hora del lunch, integran la provisi\u00f3n del d\u00eda del campo del domingo en Chapultepec. Su interrumpida demanda instala peque\u00f1os n\u00facleos renovados de consumidores en esquinas, como 16 de Septiembre y San Juan de Letr\u00e1n, afuera de la cantina de Los Tranv\u00edas, como en la primera de Donceles, o en la esquina de Tacuba y Xicot\u00e9ncatl\u201d. Otra vez Ibarg\u00fcengoitia: \u201cla torta de Armando es una creaci\u00f3n barroca en la que intervienen aproximadamente veinticinco elementos en un orden riguroso, si se altera el orden, por ejemplo, si se pone primero el chipotle, y despu\u00e9s el queso, o si la calidad de alguno de los elementos falla, que el aguacate sea pagua, por ejemplo, lo que se come uno, en vez de ser una torta compuesta, es un desastre\u201d.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Don Armando no lo sab\u00eda, pero estaba creando uno de los elementos cl\u00e1sicos de la gastronom\u00eda mexicana, con amplias distinciones respecto a sus parientes extranjeros, en cuanto a sabor e ingredientes utilizados, al grado de que la torta fuera considerada como uno de los grandes inventos del siglo XX, por National Geographic.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Pedro Reyes Aceves, en su libro, <\/span><i><span data-contrast=\"none\">\u00a1Ac\u00e1 las tortas!<\/span><\/i><span data-contrast=\"none\">, dice, y dice bien: \u201ccomo alimento las tortas son de los m\u00e1s completo, carbohidratos, prote\u00ednas, l\u00e1cteos y l\u00edpidos se rozan en la misma mordida. Por eso son manjar de ni\u00f1os y obreros, de solitarios y familias, de cantinas y resacas, de oficinistas con prisa y de los due\u00f1os de nada, son callejeras, nadie las juzga por calientes, ni les hace el feo a las fr\u00edas, y sobre todo no distinguen entre clases sociales, lo cual, en una urbe desgarrada por las diferencias, es verdaderamente plausible.\u201d\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Vuelvo yo, hay tortas de todo y con todo, hacer aqu\u00ed un recuento de posibilidades torteriles resultar\u00eda in\u00fatil, pero descubrir su importancia en la vida cotidiana, vale la pena.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">Ari Mujica, que es un chef mexicano dice: \u201cse llevan tortas los ni\u00f1os para comer a la hora del recreo, en la escuela; se las puede llevar el empleado y el obrero para comer a la hora del lonche; te puedes llevar tortas de d\u00eda de campo o un viaje largo; te preparas una torta cuando quieres comer o cenar algo r\u00e1pido con lo que encuentras en la cocina o en el refrigerador; las ofreces con alg\u00fan relleno especialmente creado o guisado para deleitar invitados. Existen preparaciones de tortas espec\u00edficas como la toluque\u00f1a, la suiza, la michoacana, la queretana, la cubana, la texana, la rusa, la pachuque\u00f1a, la argentina, la espa\u00f1ola y muchos muchos etc\u00e9teras.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span><\/p>\n<p><span data-contrast=\"none\">De todos tipos de combinaciones, destaca la cubana, que consiste en la mezcla de todos los ingredientes que se tengan, por lo que suele ser la m\u00e1s grande y cara de todas. Existen tortas t\u00edpicas de una regi\u00f3n del pa\u00eds, tales como las tradicionales tortas ahogadas de Guadalajara, las guacamayas de Le\u00f3n, o las tortas de la barra de Tampico, o las guajolotas que llevan un tamal dentro, y que son t\u00edpicas de la Ciudad de M\u00e9xico, en Puebla se llama torta \u00e1rabe, a la rellena con carne al estilo \u00e1rabe, en la cual se remplaza el Yo siempre digo que una torta bien hecha, es la manera mexicana de demostrar a nuestra muy barroca manera, ese deseo de tener al mundo entre las manos, porque la torta es mucho m\u00e1s que un simple alimento, es un refugio, una tabla de salvaci\u00f3n, un s\u00edmbolo identitario, la suma de nuestras pasiones y reflejo perfecto del esplendor de todos nuestros mestizajes, en medio de esos trozos de pan, cabe nuestra historia.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Soy Benito Taibo, bienvenidos a la\u202f<\/span><i><span data-contrast=\"none\">Cocina del Infierno<\/span><\/i><span data-contrast=\"none\">\u202fque hoy se arremanga la camisa y se dispone a echarse una torta, una tortuga, acompa\u00f1ada de un refresco tan rojo como el diablo, y a celebrar ese indispensable y maravilloso invento que por supuesto tiene su peculiar historia mexicana.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Si bien hay indicios de que en un peri\u00f3dico poblano llamado <\/span><i><span data-contrast=\"none\">El p\u00e1jaro verde<\/span><\/i><span data-contrast=\"none\">, se anunciaba una \u201ctorta compuesta\u201d, entre comillas, en 1864, casi todos los historiadores coinciden en que la torta en su forma actual, surgi\u00f3 en la Ciudad de M\u00e9xico en 1892, de mano del genial Armando Mart\u00ednez Centuri\u00f3n, qui\u00e9n en busca de ingresos econ\u00f3micos decidi\u00f3 vender panes con comida adentro \u00a1Lo amamos, Don Armando!, y sus creaciones fueron m\u00edticas y generadores de toda una tradici\u00f3n.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Estaba su torter\u00eda en el Callej\u00f3n del Esp\u00edritu Santo, hoy Motolin\u00eda, junto a la iglesia de San Felipe Neri, y las \u201cTortas de Armando\u201d, muy pronto fueron por su precio accesible y su enorme tama\u00f1o todo un fen\u00f3meno.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Antonio de Valle Arizpe, ese gran cronista de nuestra ciudad, habla con nostalgia de esas tortas, que lamentablemente yo nunca pude comer, porque las de Armando que com\u00ed no eran ni por mucho las que cuenta la leyenda.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Dice Don Artemio, y lo cito textualmente: \u201cera un placer grande el comer esas tortas magn\u00edficas, pero el gusto comenzaba desde ver a Armando prepararlas con habilidosa velocidad. Cuando Armando estaba entregado a su tarea con gracia y experta destreza nadie hozaba a proferir ni una sola palabra, o si acaso se hablaba y era en voz baja, sin quitar los ojos habidos de los desacelerados y magistrales movimientos del cuchillo, apenas se conclu\u00eda la elaboraci\u00f3n complicada de la torta, cuando ya andaba preparando otra con ligereza, y despu\u00e9s otra y otra m\u00e1s, y todas ellas con esmero y prontitud indecibles, en la puerta se aglomeraba sabore\u00e1ndose el gent\u00edo y s\u00f3lo se escuchaba en aquel amplio silencio, como esot\u00e9rico, la voz que dec\u00eda: -\u00a1Armando, una de lomo!.-, -\u00a1Armando, una de jam\u00f3n!-, - \u00a1Armando, tres de pollo para llevar!-. No hab\u00eda para nosotros, en ese tiempo, manjar m\u00e1s regalado que ese, que ten\u00eda el incomparable aderezo del hambre\u201d, dejo de citar a Don Artemio.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">M\u00e1s tarde, en el tiempo y el recuerdo, Salvador Novo tambi\u00e9n ensalzar\u00eda las glorias de Don Armando, de quien dice, y cito textualmente: \u201ces precursor de las muchas torter\u00edas que despu\u00e9s se han abierto en la ciudad, afrontando la creciente demanda de la creciente poblaci\u00f3n de transe\u00fantes, que hacen un alto a despacharse un par de tortas, ya no s\u00f3lo de pavo, humedecida la telera con el consom\u00e9, y si acaso con un chilito en vinagre, que con eso bastaba, si no, ahora de lomo con rajas, de queso de puerco, de milanesa, de huevo, de chorizo, de bacalao, o simplemente de jam\u00f3n o queso.\u201d Dejo de citar a Salvador Novo.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">La torta le merece a nuestro cronista, estos memorables renglones en los que el alimento queda \u00edntimamente ligado a la vida de la urbe, vuelve Salvador Novo: \u201cLas tortas, tortugas pacientes resignadas a morir a mordiscos, surgen envueltas en servilletas de papel de los cajones de escritorio, a apaciguar el hambre de las once secretarias que no tuvieron tiempo mas que de apurar a un jugo de naranja antes de correr al autob\u00fas. Llenan por poco tiempo las canastas que los gordos torteros pasean con una tentaci\u00f3n cerca de las f\u00e1bricas a la hora del lunch, integran la provisi\u00f3n del d\u00eda del campo del domingo en Chapultepec. Su interrumpida demanda instala peque\u00f1os n\u00facleos renovados de consumidores en esquinas, como 16 de Septiembre y San Juan de Letr\u00e1n, afuera de la cantina de Los Tranv\u00edas, como en la primera de Donceles, o en la esquina de Tacuba y Xicot\u00e9ncatl\u201d. Dejo de citar a Salvador Novo.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">El recordado y genial Jorge Ibarg\u00fcengoitia, suma en el elogio a Armando, y dice de el que es, cito \u201cUno de los m\u00e1s importantes inventores que ha habido en la historia del Distrito Federal, su importancia en la evoluci\u00f3n alimenticia de los mexicanos es tal que ya nadie se acuerda de como eran las tortas antes de Don Armando\u201d, dejo de citar a Ibarg\u00fcengoitia.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">El concepto de torta como hoy lo conocemos y disfrutamos nace con Armando, es el que la dota de esa complejidad y abigarramiento imprescindible para hacerla tan mexicana como lo es. Otra vez Ibarg\u00fcengoitia: \u201cla torta de Armando es una creaci\u00f3n barroca en la que intervienen aproximadamente veinticinco elementos en un orden riguroso, si se altera el orden, por ejemplo, si se pone primero el chipotle, y despu\u00e9s el queso, o si la calidad de alguno de los elementos falla, que el aguacate sea pagua, por ejemplo, lo que se come uno, en vez de ser una torta compuesta, es un desastre\u201d.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Don Armando no lo sab\u00eda, pero estaba creando uno de los elementos cl\u00e1sicos de la gastronom\u00eda mexicana, con amplias distinciones respecto a sus parientes extranjeros, en cuanto a sabor e ingredientes utilizados, al grado de que la torta fuera considerada como uno de los grandes inventos del siglo XX, por National Geographic.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Pedro Reyes Aceves, en su libro, <\/span><i><span data-contrast=\"none\">\u00a1Ac\u00e1 las tortas!<\/span><\/i><span data-contrast=\"none\">, dice, y dice bien: \u201ccomo alimento las tortas son de los m\u00e1s completo, carbohidratos, prote\u00ednas, l\u00e1cteos y l\u00edpidos se rozan en la misma mordida. Por eso son manjar de ni\u00f1os y obreros, de solitarios y familias, de cantinas y resacas, de oficinistas con prisa y de los due\u00f1os de nada, son callejeras, nadie las juzga por calientes, ni les hace el feo a las fr\u00edas, y sobre todo no distinguen entre clases sociales, lo cual, en una urbe desgarrada por las diferencias, es verdaderamente plausible.\u201d\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Vuelvo yo, hay tortas de todo y con todo, hacer aqu\u00ed un recuento de posibilidades torteriles resultar\u00eda in\u00fatil, pero descubrir su importancia en la vida cotidiana, vale la pena.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Ari Mujica, que es un chef mexicano dice: \u201cse llevan tortas los ni\u00f1os para comer a la hora del recreo, en la escuela; se las puede llevar el empleado y el obrero para comer a la hora del lonche; te puedes llevar tortas de d\u00eda de campo o un viaje largo; te preparas una torta cuando quieres comer o cenar algo r\u00e1pido con lo que encuentras en la cocina o en el refrigerador; las ofreces con alg\u00fan relleno especialmente creado o guisado para deleitar invitados. Tortas ahogadas, tortas de pierna al horno, de bacalao a la vizca\u00edna, tortas cubanas, y tambi\u00e9n existen las riqu\u00edsimas tortas de tamal o de chilaquiles con queso, o bien de pl\u00e1tano con crema y cajeta.\u201d Dejo ah\u00ed a mi amigo el Chef Mujica.<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">Las tortas mexicanas suelen estar aderezadas con mayonesa, crema, jitomate, aguacate, frijoles y cualquier tipo de chile o combinaci\u00f3n de ellos, como el chile jalape\u00f1o, chipotle y salsas o guacamoles. Existen preparaciones de tortas espec\u00edficas como la toluque\u00f1a, la suiza, la michoacana, la queretana, la cubana, la texana, la rusa, la pachuque\u00f1a, la argentina, la espa\u00f1ola y muchos muchos etc\u00e9teras.\u00a0<\/span><span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-ccp-props=\"{\"335557856\":16777215}\">\u00a0<\/span>\r\n\r\n<span data-contrast=\"none\">De todos tipos de combinaciones, destaca la cubana, que consiste en la mezcla de todos los ingredientes que se tengan, por lo que suele ser la m\u00e1s grande y cara de todas.
